Not Yo Mama's Corned Beef Hash

From my brunch at Pomelo this morning:

"Cork" corned beef, purple & sweet potato hash, 2 eggs sunny-side up, with gorgonzola thyme vinagrette

It was everything I could do not to lick the plate. OK, maybe I licked it a weeeee bit.
