These cookies remind me of how simple baking can be. And how a few simple ingredients can become unstoppable delicious treats.
Ingredients
- 2 sticks butter - room temperature
- 1 cup sugar
- 2 eggs
- 1 1/2 cups all purpose flour
- 2 cups rolled oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi sweet chocolate chips
Directions
- Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Adjust oven racks to the top third and lower third.
- In a medium bowl, whisk flour, oats, baking soda and salt together.
- With an electric mixer, beat butter and sugar until light and fluffy - about 3 minutes. Add eggs one at a time. Beat well after each addition.
- Stir in the flour mixture until everything is wet.
- With a spatula, fold in chocolate chips.
- Drop the cookie dough onto prepared baking sheets by tablespoonful about an inch apart. (I got 9 cookies per baking sheet.)
- Bake for 15 minutes. Switch the baking sheets location half way through baking. Let cool on a cooling rack. Make about 35 cookies.
