Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/2 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup canola oil
- 1 cup sugar
- 2 teaspoons vanilla extract
- 2 cups shredded zucchini
- 1/2 cup chopped walnuts
- 2 oz. semisweet chocolate - chopped
Directions
- Preheat oven to 350 degrees. Spray 9x13 baking pan with non-stick baking spray.
- In a small bowl, whisk all purpose flour, whole wheat flour, cocoa, baking powder and salt together.
- In a medium bowl, whisk oil, sugar and vanilla until well combined. Pour flour mixture into oil mixture and whisk until combined. The "batter" will be very dry and coarse.
- Fold in zucchini and walnuts.
- Pour the batter into prepared pan. Sprinkle chopped chocolate on top and bake for 25 to 30 minutes. Cool completely before serve.
These brownies came out surprisingly tasty and moist - despite no eggs - no butter - no liquid other than oil resulting in dirt-like batter. Will have to try adding coffee to intensify the chocolate flavor the next time.
