Cottage Comforts


Monday night's meat loaf is now Wednesday night's cottage pie (cottage pie is the same as shepherd's pie, but instead of lamb, beef is used). I fancied up the roasted garlic mashed potatoes by using the same ingredients that you would to make mashed potato pancakes.

Leftovers Cottage Pie
  • Leftover meat loaf - about 4 slices
  • Leftover mashed potatoes - about 3 Cups
  • 1 egg - beaten
  • 1 t. salt
  • 1 - 2 scallions, chopped including 3 inches of green
  • 1/4 C. shredded cheddar cheese, plus more for top
- Heat oven to 350 degrees
- Mix together mashed potatoes and next 4 ingredients
- Crumble meat loaf with your hands and press loosely into a baking dish
- Cover with mashed potato mixture
- Sprinkle a handful or so of cheddar on top
- Place in the oven on the top rack, with a foil covered baking sheet on the bottom rack to catch drippings
- Bake for 45 min to 1 hour, until lightly brown on top
- Let rest at least 10 minutes before serving
