Oatmeal Chocolate Chip Cookies

I felt a need to go back to basic after all the fancy cookies I made two weekends ago. There was no occasion/party to bring them to. But I have new victims.... my new co-workers. They look like people who wouldn't mind eating sweets although I heard a few comments of people trying to eat healthier. I'm sure a few cookies wouldn't hurt.

These cookies remind me of how simple baking can be. And how a few simple ingredients can become unstoppable delicious treats.



Ingredients
  • 2 sticks butter - room temperature

  • 1 cup sugar

  • 2 eggs

  • 1 1/2 cups all purpose flour

  • 2 cups rolled oats

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 cups semi sweet chocolate chips

Directions
  1. Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Adjust oven racks to the top third and lower third.

  2. In a medium bowl, whisk flour, oats, baking soda and salt together.

  3. With an electric mixer, beat butter and sugar until light and fluffy - about 3 minutes. Add eggs one at a time. Beat well after each addition.

  4. Stir in the flour mixture until everything is wet.

  5. With a spatula, fold in chocolate chips.

  6. Drop the cookie dough onto prepared baking sheets by tablespoonful about an inch apart. (I got 9 cookies per baking sheet.)

  7. Bake for 15 minutes. Switch the baking sheets location half way through baking. Let cool on a cooling rack. Make about 35 cookies.
